Gluten Free Pineapple Upside Down Cake

Thought I’d put a gluten free recipe together for a Pineapple Upside Down Cake. As I’ve seen a few doing the rounds recently, so not one to hop on the band wagon, but I do like to make sure everyone can have the option of having their own slice 😀

Gluten free Pineapple Upside Down Cake

I am also going to scale down the posts and recipe creating in the New Year as I’d like to start work on a new project. The project might take a little more time than I imagine and something so will have to give. Not that I will forget to keep you updated and I will of course put the word out, so to speak, on the comings and going at Cake Towers, plus if I discover a juicy new recipe I’ll naturally let you know. Enough already, there’s some sand in my eye. Here’s a rather moist and smoooth recipe to keep you going and one you’ll definitely need custard with 😀😀

Preheat the oven to Gas 3, 150c fan, 165c and line the base of a deep, loose bottomed, 8” cake tin with a slip of greaseproof paper.

8 slices of tinned pineapple

Cocktail/glacé Cherries

200g caster sugar

240g soft butter

160g gluten free self raising flour

50g ground almonds

1 teaspoon baking powder

5 medium eggs

100ml milk

30ml cocktail cherry juice (if using)

1 teaspoon almond essence

Open the tin(s) of sliced pineapple, drain off the juice and dab-dry the Pineapple slices on some kitchen paper. Line the base of the baking tin with the pineapple slices (you may get to eat one slice…….) and place the cocktail/glacé cherries in the middle of the pineapple slices and fill any remaining gaps with them also. Put to one side whilst you prepare the cake batter.

In a separate bowl sift the gluten free flour, ground almonds and baking powder.

Beat the sugar and the soft butter in another bowl with an electric whisk or table top mixer, until light and fluffy, then add the eggs one at a time with a spoonful of gluten free flour mix. Once the eggs are all mixed in, beat in the milk and cherry juice (if using) and almond essence. It will look a little split, but will come together once cooked.

Pour the cake batter into the prepared tin and pop in the oven and bake for 55 – 60 minutes or until an inserted skewer comes out clean.

Once cooked,  remove from the oven to cool a little. If using straight away you’ll definitely need to leave it to cool before, placing a large enough plate/serving dish over the cake tin and turning it over – for you Upside Down Cake!

Serve with custard (because there really is no other option 😀😀😀 )

If you are serving this much later, or the next day, cover until required. To warm through, just place back into a warm over for about 15 minutes, you may also want to cover the cake with some additional greaseproof to stop it catching and drying out. And still serve it with custard!

Rhubarb time! Spring IS around the corner

At last! The ‘Beast from the East’ is, for now, being blown away across the Atlantic and we can finally welcome in the fresh, green (and pink)  shoots of new beginnings for 2018.

The sun is currently shining and for us at least, the snow has melted away.  We continue to strive to provide a good base from which Noah and his sister can grow and experience. With recent pressures on the NHS we are still waiting for his annual blood test – we can wait, he isn’t going anywhere and there are no over-riding concerns for him. He eats and he continues to grow.  The annual check up is certainly re-assuring though, as it confirms to us that he and us are going about his dietary needs in the right way.  I might bang on about cakes, but the neighbours do fairly well from the extra abundance of our baking exploits and trials.  The tribulations go in the bin

And so a little taste of Spring to brighten up you dinner/lunch table, a little piece of comfort food that will go down just as easily on its own, with cream, sour cream or a dollop of custard – the choice is yours.

Preheat your oven to Gas 3, 170c, 150c fan and line an 8″ round, deep cake tin.

For the cake;

  • 3 eggs
  • 60g caster sugar
  • 60g light brown sugar
  • 150g melted butter
  • 60ml sour cream
  • 150g gluten free self raising flour
  • 1 teaspoon cinnamon
  • 220g chopped (Yorkshire) fresh rhubarb

For the crumble;

  • 70g Rice flour
  • 15g cornflour
  • 20g gluten free oats
  • 40g caster sugar
  • 50g butter

Make the crumble first by putting all the ingredients into a bowl and rubbing the butter into the dry ingredients until you have a mix that looks like breadcrumbs. Alternatively place all the ingredients into a food processor and blitz for a few seconds to get the same desired effect, put finished product to one side.

For the sponge cake, again place all the ingredients into a large enough bowl and using a hand-held electric whisk, whisk altogether for a 4/5 minutes.  The mixture will become light and fluffy and thicken as you whisk.

Spoon the cake mixture into the prepared cake tin and smooth flat, scatter the chopped rhubarb, evenly over the surface of the cake, then scatter over the crumble mix.

Place into the oven and bake for 40- 50 minutes, or until an inserted skewer comes out clean.  Leave to cool in the tin, before turning out.

You could serve this warm and or cold, allow to cool a little though to let the crumble topping become crispy.

Further options – you could of course use ginger instead of cinnamon, you could add some strawberries as well as the rhubarb – keep the quantities roughly the same for the fruit though.

 

 

Gluten Free Paradise Slice

And not a soggy bottom in sight.

I seem to be getting through my list of bakes to convert to gluten free. There was the chocolate mini rolls last year, thanks to the new series of The Great British Bake Off.

Then there was the creation of the gluten free ‘double decker’ bar… home-made nougat….ummmm 😀

Now, the gluten free Paradise Slice. But without the coconut….it’s not my favourite. Currently found in a local high street coffee chain

This is a 2 part bake, so line a small cake tin (26x16x3cm) with greaseproof paper and Preheat the oven to Gas 4, 180c, 160c fan.

For the shortbread;

– 75g soft butter

– 40g caster sugar

– 80g rice flour

– 40g cornflour

Beat the butter and sugar until, light and fluffy. Sieve the two flours together onto the butter and mix until fully combined and bring together to form a dough.

Now this is a small amount of shortbread and I found it easier to roll this out, to the size of the tin, but placing the dough onto the greaseproof, covering with cling film and the rolling out to fit the size of the tin. Remove the cling film before baking, then bake the shortbread for 10 minutes. Remove from the oven and cool completely before spreading the jam.

For the next bit;

150g Raspberry jam (or other dependent on taste)

90g soft butter

90g caster sugar

2 eggs

60g ground almonds

30g gluten free oats

90g dried fruit

40g halved glacé cherries

1 teaspoon almond essence

Once you have spread your jam, beat the butter and the sugar until light and fluffy, beat in the eggs one at a time, mix in the almonds, oats, rice flour and essence, then stir in the dried fruit and glacé cherries. Pour onto the jam, shortbread and bake for 25 – 30 minutes. There should be a light bronzed top. Allow to completely cool in the tin before removing and slicing – as 9 big slices or 18 bite size pieces.

 

Gluten free Sticky Pumpkin Spiced Cake

My secret love affair with pumpkin spice continues.  Who knew there was an actual spice that is based around a pumpkin!?  It really does add an extra element to a cake or bake. It’s not just for coffee.

This is a variation on a theme. Gingerbread cake meets sticky toffee pudding. Sticky Pumpkin Pie Spiced Cake. I guess you could even have this as a pudding if you thought about it enough…….

This one requires a little planning and forethought.

Preheat the oven to gas 3, 170c, 150c fan and line 2 x 7” cake tins.

250g stoned and chopped dates

250ml water

90g butter

90g soft brown sugar

90g Black treacle

90g golden Syrup

1 egg

100ml milk – I used semi skimmed

225g gluten free self raising flour

2 teaspoons pumpkin spice

Stage 1 – place the chopped dates and water into a pan, bring to a gentle boil, heat for a minute, then switch off and leave to cool. This could take around 15 minutes.

Stage 2 – in another pan – heat gently the sugar, butter, syrup and treacle until the butter has melted and the sugar has dissolved. Leave this too cool, again for around 15 minutes.  If these last two stages are too hot, the egg mix will scramble before it’s had a chance to even cook in the oven.

Stage 3 – whisk the egg and milk and set to one side.

Stage 4 – sift together the gluten free flour and the spice.

Stage 5 – once everything is in place and done and cool enough, add the egg mix to the date mix. Add this then to the sugar and butter mix and stir well.  Finally fold in the flour mix. Stir until everything is completely mixed in.

Pour the mix into the 2 tins and bake for 30-40 minutes, or until an inserted  skewer comes out relatively clean, with some crumb attached. The remaining heat will finish the cooking off. Leave to cool in the tins, before removing to fill.

For the filling;

130g soft butter

260g icing sugar

30ml milk (optional)

100ml caramel sauce

Beat the butter until light and fluffy, stir in the icing sugar, milk and 80ml of the caramel sauce. Beat further (I used a hand electric whisk) until you have a piping consistency.

Fill and decorate as you desire and drizzle the final 20ml of sauce over the cake to finish.

Gluten Free Halloween Biscuits

Love this time of year 👻🍁🍂🎃 (I might have said that before 😀😀)

These rather ghoulish biscuits are a great gluten free treat for any party or after getting back after some Trick or Treat’ing.

Gluten free biscuits can be a bit hit and miss, in terms of recipe and baking. Many a time I have tried a recipe only for the finished bake to be one big puddle of dough.  It’s all in the lack of gluten, there isn’t anything to hold it together. So I tend to look at a mix of flours, rather than alternative binding agents.

These can be put together relatively quickly and require no ‘resting’ or putting in the fridge.

100g soft butter

180g Caster sugar

1 large egg

200g Rice flour

160g cornflour

1 teaspoon vanilla essence

Green, black and red colouring

Pre-heat your oven to gas 5/180c/170c fan.

Line 3 trays with greaseproof

Beat the butter and sugar together until light and fluffy and then beat in the egg, then essence.

Sift together the 2 flours and then stir into the fluffy mix, until you can bring the whole lot together to form a soft but firm dough ball.  Divide the mix into 2 and add you colouring as desired.

Roll out to your desired thickness, roughly the thickness of a pound coin, 2-3mm and cut out the shapes using your desired cutter.

Depending on the size of your cutter, this recipe will make approx 20-25 cookies/biscuits.

Place the raw cookies on the lined trays and bake, one tray at a time, for approx 8-10 minutes. Leave to cool before removing from the tray.

I decorated with red coloured glacé icing, but you are of course free to decorate as you wish.

 

Gluten Free Halloween Cake

I think I secretly love this time of year. The ghosts and ghouls, the dark and devilish. Not sure about all the blood and gore! But it is rather fun. Certainly had a bit of fun with this cake – a wonderful centre piece for the Halloween table – and its gluten free!

Halloween has been gathering some momentum over here in the UK for the last 10 years. Not sure I had heard about it when I was little, Noah now loves this time of year (I think it’s the sweets when he goes Trick or Treating)

A chocolate cake with a buttercream filling with a gluten free chocolate krispies as the brain, decorated with Schar Cookies and chocolate buttons.

Based around a 7″ cake tin recipe, the first thing will be to make the ‘brain’. Which you could also make using white chocolate coloured red for extra goriness.

Prepare the night before to allow for the krispies to set;

  • A bowl that fits the base of your 7″ cake tin
  • 110g gluten free rice krispies
  • 180g melted chocolate

The curve of the bowl will form the curve of the head of the cake and fits nicely onto the finished cake prior to icing. Mix the krispies with the melted chocolate, pour into the bowl and press down with the base of the cake tin, then leave to set.

 

Pre heat the oven to Gas 4, 180c or 160c fan and line 2×7″ cake tins with greaseproof paper.

  • 100ml sunflower oil
  • 100g melted butter
  • 200g caster sugar
  • 4 large eggs
  • 50g cocoa (I use Food Thoughts)
  • 180g gluten free self raising flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla essence

Beat all the ingredients together, I used the paddle beater with my table top mixer, for about 5 minutes.

Pour the batter evenly into the 2 cake tins and bake for about 30 – 35 minutes or until an inserted skewer comes out clean. Remove from the oven to cool, then take out of the tins.

Buttercream and topping;

  • 200g soft butter
  • 400g icing sugar
  • red food colouring
  • splash of milk
  • flavouring – optional
  • 1 packet of Schar cookies
  • 1 packet of chocolate buttons
  • 1 packet of ready to roll fondant icing

Beat the butter until its light and fluffy, then mix in the icing sugar before beating further until the buttercream is spreadable.  At this point add the colouring and any optional flavour and beat this in.

Carefully slice each cake in 2 and build using the buttercream – a couple of tablespoons of buttercream should be enough for each layer. Pop the set krispies on top and cover the whole cake with the buttercream. Smooth the buttercream ready to cover. Leave a little over as you can use this to stick the cookies to the cake.

Roll out the fondant icing, you’ll need to roll it fairly thin in order to cover the cake and leave enough extra to give the covering the ‘ghost’ like base.

Cut the cookies so that there is the cream like filling on one side and a plain biscuit on the other.

Use the buttercream to stick a chocolate button on the cookie, then to stick the cookie onto the cake.

 

Gluten Free Lemon and Blackcurrant Tart

There is a theme running here somewhere?  There may well be, but when you have some ingredients that need using up, better to bake than waste.

The idea for the tart came from a recipe by Raymond Blanc found here on the Stylist.co.uk website, but with my little twist or two of gluten free. It is wonderfully light and fresh. Apologies for the Lego, Noah is currently loving the toy in its many guises, and it seems every known surface is covered in the stuff.

To make the pastry, for an 8″ flan case;

  • 200g gluten free plain flour
  • 100g diced, cold butter
  • 2 tablespoons icing sugar
  • zest of 1 lemon
  • 1 egg yolk
  • 1/2 teaspoon xanthum gum
  • cold water to bind

I used a food processor to blitz the flour, xanthum gum and butter into fine breadcrumbs. You could of course use your finger tips to do the same, using them to rub the flour and butter together. It just takes a little longer. Once you have achieved the breadcrumbs, stir in the egg yolk, lemon zest and sugar and enough cold water to bring it to a dough.  When adding the water I would suggest mixing this in a separate bowl and use your hands to bring the dough together.  I make the dough a little sticky as the flour will absorb some of the liquid. Once mixed together and you have a dough ball, wrap in cling film and pop in the fridge for about 30 minutes.

Pre heat the oven then to gas 4, 170c, 160c fan

To then make the filling;

  • 4 large eggs
  • 160ml double cream
  • 160g caster sugar
  • zest and juice of 2 lemons
  • 1 small tin, drained, of blackcurrants in juice, about 120g

Whisk the cream, eggs, sugar, juice and zest together and leave to infuse a little whilst you then remove the raw pastry from the fridge, roll out, line the flan case, prick the base, fill with greaseproof paper and baking beans and bake blind.  Bake with the beans for 10 minutes, remove from the oven, remove the lining and beans and then bake for another 20 minutes.

Remove from the oven and cool the pastry – Turn the oven down to gas 1, 160c, 140c fan

Trim your pastry if that is your thing and slowly pour in the egg and lemon mix.  Scatter and evenly distribute the blackcurrants around the creamy mix. Return to the oven to finish the bake for 25-30 minutes. The mix needs to be just set.

Cool and set for another hour before serving or leaving to go cold and serving later.
